Tasting Tuesday: Overnight Oats

Breakfast: It’s the most important meal of the day, but can be difficult to get to if you don’t wake up early enough. That’s where overnight oats come in to play. This grab and go breakfast is made the night before so all you have to do in the morning is reach in the fridge and grab a spoon, and maybe a few toppings, and you have a quick, healthy, and inexpensive breakfast.

Ingredients

  • ½ cup old-fashioned rolled oats

  • ½ cup  milk of your choice

  • ¼ cup vanilla yogurtregular or Greek

  • ¼ teaspoon vanilla extract

  • 1 tablespoon sweetener of your choice, to taste

  • 1 pinch salt

Instructions

  • Place all ingredients in a 16-ounce jar or a bowl and stir until well combined.

  • Cover and refrigerate overnight (at least 8 hours).

  • In the morning, give it a quick stir; enjoy as is or add your choice of mix-ins and/or toppings.

Overnight oats will last 3 to 5 days in the refrigerator so prep a few at the same time and experiment with different toppings each day!

This simple recipe is great topped with bananas, strawberries, or blueberries. You can also add a variety of nuts for texture, and spices like cinnamon and nutmeg for another layer of flavor. Remember, this is just the base recipe. The combinations are endless so get creative and share your favorite overnight oats recipe!
