Tasting Tuesday: Halloween Stuffed Peppers

We’re back with another Tasting Tuesday, and another excuse to celebrate Halloween! This week’s recipe is a festive take on a simple dinner, that’ll be fun for everyone!

Ingredients
  • 4 – 5 Large Orange Bell Peppers
  • 1 Tbsp. Extra Virgin Olive Oil
  • 1 Lb. Ground Beef or Turkey
  • 1 Tsp. Taco Seasoning
  • 1 Can Black Beans, Rinsed and Drained
  • 1 Can Corn, Rinsed and Drained, or 1 Cup Frozen Corn, Thawed
  • 1 Cup of your Favorite Salsa
  • 2 Cups of Cheese, Divided
Instructions
  1. Preheat oven to 350 degrees.
  2. Wash and clean out bell peppers, removing all membrane and seeds.
  3. Add olive oil to a large skillet and brown meat over medium-high heat, adding taco seasoning as the meat browns.
  4. Once meat is fully cooked and browned, add rinsed beans, corn, salsa, and 1 cup of cheese. Combine and reduce heat to low.
  5. Cut jack-o’-lantern faces into the bell peppers, and then spoon mixture into each pepper.
  6. Place peppers on a lined baking sheet, and bake for 20 minutes uncovered.
  7. Remove peppers from oven and sprinkle remaining cheese on the tops of each pepper and place back in oven for 5 minutes, or until the cheese has melted.
  8. Remove the peppers and let them cool for 5 minutes.
  9. Enjoy!

Top this off with some sour cream or Greek yogurt and you’re set! You could also add rice or quinoa to the meat mixture, which will allow you to stuff more peppers, and feed more friends! Or leave the meat out completely to make this a vegetarian friendly meal!
