Tasting Tuesday: Cinnamon Toast Crunch Cookies

Who doesn’t love this cinnamon sweet cereal? It’s arguably one of the best, and these cookies perfectly capture the flavors we all love. I’ll let you in on a secret though, you can literally use any cereal you want in this recipe! Cinnamon Toast Crunch isn’t your thing, but you’re a sucker for Fruity Pebbles, substitute my friends! The cereal aisle is LARGE, and the possibilities are endless!

Ingredients
  • 2 Cups All-Purpose Flour
  • 1 Tsp. Baking Soda
  • 1 ½ Tsp. Ground Cinnamon
  • ½ Tsp. Salt
  • 1 Cup (2 Sticks) Unsalted Butter @ Room Temperature
  • ½ Cup Granulated Sugar
  • ¾ Cup Packed Light Brown Sugar
  • 1 Large Egg
  • 2 Tsp. Vanilla
  • 1 ½ Cups Crushed Cinnamon Toast Crunch Cereal
Icing Ingredients
  • ½ Cup Confectioners’ Sugar
  • 1 Tbsp. Milk
  • Pinch Ground Cinnamon
  • Pinch Salt
Instructions
  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt. Set aside.
  3. In a stand mixer, or in a bowl with a hand mixer, cream together butter, granulated sugar, and brown sugar until light and fluffy, 3 – 4 minutes.
  4. Mix in egg and vanilla until just combined.
  5. With the mixer on low, blend in flour mixer until just combined, making sure to not over-mix.
  6. Fold in crushed cereal.
  7. Split dough into roughly 3 Tbsp. sized scoops and place onto prepared cookie sheets, about an inch apart.
  8. Bake for 10 – 12 minutes, until the edges are just turning golden brown. Let cool in pan for a couple of minutes before moving to wire racks to cool completely.
  9. Once cookies are completely cooked, drizzle with icing.
Icing Instructions
  1. In a small bowl, whisk together confectioners’ sugar, milk, cinnamon and salt until will combined.

So there you have it. Your favorite cereal in cookie form. Don’t forget that you can make this with literally any cereal, just maybe remove the cinnamon from the dough and icing if you’re using a cereal with a different flavor profile.
